Feeling Hot! Hot! Hot!

Well, I do not need to tell some of you how hot it is here but ugh!
 It was 108 at the pool here on the Central Coast and boy did the pool deliver! 
I am sticking to the couch as I type and my wrists are sweating as they rest on the laptop.
We do not have air conditioning and 99% of the time I could care less about a/c but the last two days it would have been nice for sure but then the electric bill would come and I would faint with sticker shock.

We had physical therapy today and Enzo's PT was a smart cookie and had the water table for him to play with. We caught the bus and headed to the pool (thank you Shelley!!!).
We got home and even though the house was closed up and dark it was still 92 degrees in my room. Right now it is 94 degrees but it is almost cooling off at 6:30 pm.

Besides the pool, ice cold drinks and doing much of nothing, how else to you cool down

Can we have ice cream for dinner?

Momma Moment


Friday we went to the pool with some friends and had a wonderful time. My sweet bubba is so amazing and has such a wonderful spirit. He wants to go, go, go all the time. He was so excited to play with "big boys" and boys his age too! It was a little bittersweet though. I noticed he had a hard time keeping up with all of the boys. Obviously, he would not be able to keep up with the older boys, but the boys his age he was a little behind. I don't always think about his C.P.  because he just goes out and gets things done "Enzo's way". But every once in a while I am reminded of it and hope that kids do not think of him differently or make fun. A mother's worst nightmare is your child getting pick on. Thankfully, I had not seen kids make fun or put him down. But rather they embrace him and let him tag along. :)

The thing that is so amazing is that he does not even notice it! He just kept up as much he could and if they made it to the end of the pool (1 foot deep) and turned around and passed him, he would turn around immediately too. He put an effort of 200% and it blessed me so much. He just simply amazes me everyday!

Quick Note

I am winding down from six days in a row at work. We are all off schedule sleep wise. We are going to bed late and waking up late which is not bad since it is summer. I went to bed early last night....11:30, well sort of early. I am keeping dinners super easy and light. Dishes are getting done somehow, laundry is clean but not folded or put away. But I do not care, I am enjoying time with the kids and Eric. Eric has been AMAZING!! I came home on Friday night and he was in the kitchen doing all the dishes. He swept and mopped the kitchen and vaccumed the house! We were able to enjoy Saturday morning instead of cleaning, so sweet!

Today it finally warmed up and felt like summer!! Enzo had therapy this morning and he got a new splint for his left hand. For the next couple weeks at therapy he will be wearing it during his session. Eventually, he will be wearing it during the night. I think it will really help him and his hand. I had to bribe him with a lollipop to wear it. Trader Joe's now has natural organic lollipops!!! Yeah!

With the sun out I brought out the pool again and poured some warm water and the kids played for awhile. We are watching "Muppet Movie" right now and I love this movie. I remember watching it as a kid. I loved the muppets, especially Miss Piggy! HiiiiYaa!(karate kick). I could not believe how many big stars were in it, Bob Hope, Richard Pryor, Madelin Kahn, Steve Martin, Orson Wells etc. It is just as fabulous as I remember.

Finally, I have a great tip with leftover rice pasta:
I have found the only annoying thing about rice pasta is when it comes to reheating it. Instead of adding all your sauce to the pasta, serve up your family and then store your cooked pasta in a container without any sauce, sauce in a separate container. Then when you go to reheat the next day add pasta to a saute pan with about 1-2 cups of water. Over medium to high heat warm up water and pasta. The noodles will become untangled and soft again. Drain and serve with favorite sauce. It worked like a dream and I do not know why I did not think to do it before!

P.S. Only 16 days until our Alaskan Cruise!!!!Yippee!! My Uncle has so kindly paid for my entire family to go on a seven day cruise to Alaska. There will be about 35 of us! What a blessing!

Giveaway, Grads and Good Stuff!


 Alrighty folks, today is the last day to enter the giveaway. I realized that I did not put an end date so today will be a week since it opened and that sounds good. Tonight at 8:00 pm Pacific Time I will close the giveaway.

I have been a little busy this last week with work, graduation and family here. So I plan to get back on schedule. Thanks for the patience :)

Last week was graduation for the University and our neighbor graduated! I was so honored when he asked me to make lunch for his family and friends. We have had him over a few times for dinner and he really enjoyed my cooking. So I planned out a menu and we shopped and Friday and Saturday I cooked up a storm. Not to mention I worked a double at the restaurant on Saturday. For the restaurant, graduation is the second busiest day of the year next to Valentine's Day. It was a hectic but fun day! I love having twenty things to do and only a certain amount of time, I thrive on being under pressure.

 In a large lettuce leaf with a dollup of guac, spoonful of veggies and drizzle with one or all three sauces, wrap it like a taco and enjoy!

I love cooking and I was so thankful to give a special gift to our Graduate.

Lastly, we had my sister and her family stay the other night on their way up to Northern California. They are staying with Scott's mum and then will visit here for about a week. We all stayed up late talking and the kids just adored New Zealand cousins. Enzo calls the "Museum Cousins". He can't quite say New Zealand ;)

Serious Goals Being Met

This last week Enzo has had some amazing developments. I posted about him playing midline equally but even better news is a goal is about to be officially met. He is putting on and pulling up his chonies and pants! What?! I know huge, absolutely huge. The best part is that he is initiating doing it himself. We saw his OT today and she was floored at what he is doing. It is one of the goals we have had since he was probably two or so. She wants him to master the skill and then the goal will be officially met. In my mind, he has done it and he wants to continue doing it. Praise God!

How much more of an appropiate verse for him. I have also been saying
another great scripture when he tells me he can't and that he is not strong enough.

It is so hard when he says he can't do something. I have to really interrupt whether or not he just does not want to or if he physically can not. Most of the time he just does not want to. When those time arise I have started to say the verse and really encourage and tell him I will help a little. I make sure he is doing 90% of the task but that he feels confident that I am there along side him.

A Wonderful Miracle

I look over and see Enzo actually using his left hand to pick up a Magna-Tile
and was using "Lefty" to actively holding the tile and placing it next to another one that "Righty" had.
I started tearing up
God is so good!
He is answering our prayers that Enzo would use his left side without any persuasion.

Miss Victoria's Scarf

Today is a special day for my little bub, Enzo. He turns three on Thursday which means he is out of the in-home Speech Therapy and into a class twice a week. I am so happy for all of his hard work. His teacher Miss Victoria, who has been coming to our house for a while now, has been such a blessing. I knitted a scarf this last week for her. She has beautiful blue eyes and thought this would be perfect for her.

We are happy to be moving up but we will definitely miss our visits with her :(

Enzo Update

Today we went to CCS for Occupational Therapy (OT) weekly appointment. Since we just moved into a new city we have to go to that city's therapy unit, so a new OT and PT. Miss Sherry, his OT, is amazing. They connected right away and he responded really well last week. This week she wanted to use kinesio tape on his left hand and arm in order to strengthen his left side. She only used one piece of tape on the top of his hand right below his knuckles, going up his arm halfway. I had her put it on my arm first to show him it did not hurt and with a little persuasion/promise of a lollipop he allowed her to tape him.

Within seconds his hand was relaxed!! I could not believe my eyes. How could a little piece of tape correct his hand and grip so fast. She hopes to tape his hand/arm every week and add different positioning to strengthen and then as time goes by only tape a few to see the progress. Each taping will last about four days and we will see her every Monday. So it should last until Thursday and possibly part of Friday. This is so exciting and really crazy how it effects him so quickly. Just one step in the right direction toward recovery/healing. God is so good and answers prayer in so many ways, like tape. Amen

Day 19

Today we had speech therapy and she was evaluating Enzo before he moves out of her program to preschool program. He did above his age in the articulation and part of another section. He will continue two weeks from now. Very cool!

The neighbors took the kids again today for about an hour while I cooked dinner. I had such a quiet, peaceful hour. Love those guys.

Spending: Nothing
I am determined to find a way to make my budget work with eating more of a vegetarian diet. I searched all of these blogs on being a frugal vegetarian or frugal gluten free. Not! The frugal Gluten free was a site that made meals for under $20. Um? I need a meal for four under $7, not $20 a meal. For that my monthly grocery budget for just dinner would be $600. So I am on a mission in order to make this work and get us back on track.

Menu:

Smoothie
I used half the juice I normally and add four oranges from my neighbor tree(I have permission).

Snack:
bananas and nuts

Veggie Faces,
Soup with no tortillas and they gobbled it up.

Snack:

Rice Noodles with tomato sauce. I used some canned tomatoes with fresh tomatoes and add about a cup of the tomato soup from the other night. So yummy

For the Princess: I made cucumber slices for eyes with olives on top
mushroom slice for a nose half grape tomatoes for lips and carrot sticks for hair.

For the Raccoon: Cucumber slices for eyes and olives on top with mushroom slices all around for a mask. Hummus for the nose. Half grape tomatoes for a mouth.

Day 17

We had an appointment for Enzo with his new Orthopedic. It went well and the doctor said his hips looked good and his leg length is good too. Praise God.

Spending: $22.53 Fruit and veggies, I needed to buy more because of the diet change for Kira. She is feeling so much better after only two days.

Day 10

We had a fabulous day. We rotated toys and I brought in all sorts of toys they hadn't played with for a couple weeks. That kept them busy for about an hour while I did a shopping list and dishes. We went to the park. It was a beautiful day. One of my nice neighbors has a great garden and he has been giving me arugula. Today he told me that if I wanted the little garden on one side of the house I could have it with the kids. So sweet.

Eric got home right at five tonight, it is so nice. I made dinner for them and left for Costco, Food 4 Less and Trader Joe's. My little piece of sanity. As I was leaving and told the kids bye and Enzo got so sad. He told me "Okay you go by yourself and I come with you". He wanted to join me so bad. It is so hard sometimes to leave that guy....But I did. Instead of "Calgon take me away" it is more like "Grocery shopping take me away" I need that time to price evaluate things, have just background noise, and meander aimlessly if I want. I did all of that and loved every one of the 120 minutes it took, I was efficient but not fast, on purpose.

I got home to the kids yelling "Momma!!!" and running toward me. I was refreshed, it was bedtime and here I am.
I shopped for groceries for the rest of the month and had some household items too
I budgeted $144 with estimate costs of everything. Went with cash in hand and no straying from the path. Stay on target! Stay on target!

Spending:
Costco $73.41
Food 4 Less $49.95
Trader Joe's $11.96
Total $135.32

I spent $8.68 less than planned. I even got a couple things not on my list.

I get our sun butter and rice noodles at Traders, luckily it is right next to Food 4 Less.
$22.13 went to trash bags, detergent and draino, which I taking back because Eric just cleaned the drain. It was bad, not from me thank goodness. I love that he is willing to do that.

Leaving $113.19 for food.

Total Grocery for the month $182.06
I am not planning on buying any more groceries for the rest of the month. I even planned for my trip. The kids and I are taking the train down on Tuesday the 23rd to Orange County. I am working for someone at the restaurant Friday and Saturday. We are planning on going to Disneyland that Thursday before our annual passes expire. My Uncle Matt might join us and the kids just adore him. So in my planning for my trip I bought Eric specific food while I am gone. I going to make Enchiladas for the Guys for our Tuesday night meal even though I will be gone. I am going to make everything else for Eric ahead of time so that he won't have to think about it. But I got him two frozen pizzas. Only because it was cheap and it will be a treat for him while I am gone.

Yellow and white is our name for poached eggs. Kira came up with it and it stuck.

There is the day. And as I was reading Owlhaven blog about this she stated something that stuck. She was commenting on her title of 30 days of Nothing and noticed that they were not going without nothing and far from it. But more so 30 day of less. So do not be hard on yourself if you are trying this out and feel like you are failing. It is just an exercise in control and appreciation.

I appreciate that we have money to go to the store and buy food. I am so thankful I have a roof over my head. I am thankful I know where my children are. I am thankful I know where my husband is. I am so thankful for the way God PROVIDES everything for myself and our family. We are fortunate to live where we live, drink clean water and do not have to walk miles to get it. The list can go on and on, but I must go to bed and be thankful for it and not sleeping on the floor with bugs and such.
May you be blessed by this and thank God for what you have instead of complaining what we do not have. I type that to remind myself too.

Day 6 -28 Days of Nothing

Got up early in hopes of having some alone time/quiet time but it did not last too long. I guess I have to get up earlier. I decided to start my day by eating a frog first. What I mean is do the worst thing on your plate first and the rest of the day is a breeze. I decided to embrace this idea today. I really wanted to sew today because I have five million projects running around in my head and I need to do one. So I decided that if I ate my frog like a good little girl I could have dessert, sew something. So I got the kids and I dressed, beds made, dishes done and all folded laundry put away before 9:30. Oh yeah! Now that is productivity. I felt so good doing everything that I was dreading doing quickly and earlier on in the day that I did not feel guilty for sewing.

I decided to make a twirly skirt for Kira. I used a tutorial. I modified it a little. Instead of three tiers I made it with two tiers but it has lining and tulle sandwiched between the lining and the outside shell. I bought this super cute cherry fabric forever ago and some lady gave me a huge bag of tulle (random). The outside shell is the cherry fabric, tulle is red and the lining is black. She loves it and is excited to wear it tomorrow to church with her red velvet jacket.

It took about four hours on and off throughout the day. I had some mistakes but I think I could easily make another one in half the time. I need to make a pattern for next time. Getting measurements and figuring out how to sew it took a lot of time. SO next time it will be quicker for sure. I think I am going to make one for me because it looks so fun and was super easy and cheap to make.

I feel so accomplished today. I did all my chores, had fun with the kids and sewed.
I love sewing but it is definitely hard with little ones. Enzo is so sweet whenever I am doing anything, he comes up to me and says "Momma, can you hold me? Just for a wittle bit." Such a sweet little voice and who can resist that. It melts me every time. But today he said that but then once he said "Can I hold you for just a wittle bit?" He wanted to hold me, love that boy.

Casein

I guess it would not be life if it was not crazy. So the last few days besides packing and dealing with the idea that we are moving this weekend!!! I have been dealing with Enzo and his poops again...wah wah WAH! I know he has not had any gluten and yet he has been pooping right after every meal and not normal poops. This is not good. So I begin thinking what if it is dairy, we do not eat that much but we have been eating more lately. I decided to search Casein in google. Casein is a milk protein and after a few google searches I found on a Celiac website a forum of GF people complaining of similar symptoms but with Casein. Oh wait it gets better. As I read on I found out that most likely he has a casein, egg and/or corn allergy too. We basically have corn tortillas everyday!

Well, it makes perfect sense after reading these comments. Basically when you are consuming gluten your body does not absorb nutrients properly. So his body has recovered and now after about a year he is actually absorbing these other possible allergens and I am seeing reactions with him and Kira.

Now what!!! I am going to take all three of us off dairy, corn and eggs for three weeks and then slowly reintroduce each seperately to see if there are reactions. Cooking is going to be so much fun(Not!). This is going to push me to find even better recipes now more than ever.

For instance, today for lunch we had rice bread avocado sandwiches, apples and grape tomato halves and yes, Kira actually ate a tomato and liked it. For dinner, I made rice noodles with a tomato basil sauce. Now, normally I would add parmesan cheese and a little dollup of butter to my sauce at the end to make it creamy. Instead I added a 1/4 cup of raw cashews to my sauce in the vita-mix and blended it until it was creamy. It was soooo good. I also had to make garlic bread without butter. I broiled the bread until it was a little toasted and then sprinkled garlic and sprayed canola oil on top for a little buttery-ness. It was pretty tasty considerering the alternate of just not having it.

I am going to have to perfect my pancake recipe without eggs and butter now :(

I think it is a good thing though. I know we do not eat that much processed foods but we eat our fair share. I want to eat more whole foods and I think this is the pushing limit to make me come up with better even more healthier recipes. I will definitely post them as they flop or taste good.

Day 27 of Nothing

Friday the 27th

I get a call today from Enzo's occupational therapist. He tells me that on Wednesday when he was in for his weekly appointment there was another little boy who had chicken pox at the unit. Oh Great! Now Enzo had his first round of shots back when he was one month and he has not had any more immunizations since. Now that is a WHOLE different discussion, but I will briefly tell you, Yes, I have done all of my research and investigative reporting on the subject of immunizations. Eric and I decided that we did not want to possible hinder Enzo's mind any further with the possiblilty of side effects of his shots. The best is when at his first year check up his pediatrician was hounding me to whether or not we were going to do shots that day. When I finally told him we were not continuing giving him shots he got all gruff with me.

This is the doctor who I really liked and enjoy going to see him but he constantly belittled me and it got old. I was fed up when I went to see him at Enzo's four month checkup and I told him I thought something was wrong because he did not use his left hand at all. He politely told me it was nothing but to set my mind at ease he would refer Enzo to a neurologist. Praise the Lord he did. She was the one who diagnosed him with Cerebral Palsy.

After I told him we were not going forward with shots he sat there grumbling and looking at his paperwork. Then he proceeds to tell me that if I am going to have him have any shots it should be these two. Are you kidding me?! Out of a ten different shots there are only really two that you think they really need? Really, no really, how do I even believe that. I do not remember the two that he mentioned because I was so flustered at what he said.

Okay I guess I went off a little more than I planned on the whole immunization thing. Sorry. Now I am not againist it nor really for it. But as of right now Enzo is not totally immunized. I know this is a crazy subject and I am not trying to be on a soap box or anything, I am just telling you how we came to the decision not to immunize right now.

So as I am writing this Enzo's teacher called me to tell me the scoop of the child who came to school with chicken pox. Apparently he HAD his chicken pox shot and still got them....hmmm. Isn't that interesting? Anyways she told me that there is a incubation period of 10-14 days until they show signs or are contagious, so we are okay to come to school. I don't know how I still feel about having them possibly getting someone else sick, I would feel terrible.
So that was my friday day in a nutshell.

Kira decided to throw one tantrum after another all day long and I was losing my mind. I am still trying to keep to the no tolerance rule. I am asking them once to stop what they are doing and then after the second warning if they still do not heed my words it is a timeout no matter what. If they fail to take the time out I threaten with the spanking stick. Oh brother I am hitting all the "Hot Topics" today. I do not like to spank and I really only spank if there is outright defiance. I think my no tolerance rule of time outs has really worked. It has kept me calm and I can tell I have more patience with the kids. I think this works for us. But there are those days of pushing the limits and Friday was definitely pushing the limits at every moment. I finally had to put her down for a nap even though it was 3:00 pm, she needed to cool out. My sitter came over and I woke her up and she was definitely in a better mood. I left for work.

Work was crazy weird. It was as if it was a full moon or something. It was a decent night tips wise, nothing to go crazy about but okay. I was tempted to bring a bottle of wine home at the end of the shift but I did not.
I did not buy anything today. The cool thing about this experiment of nothing is that it has rubbed off on other people. Eric told me has really tried to not spend too. Which is great since I did not tell him he needed to do it too but he saw that we were saving money and he wanted to help too. I told one of my co-workers about what I was trying to do this month and I think he is trying to not spend anything this next month. It is pretty cool, especially in these times of uncertainty.
One more day of no spending. Yeah!

Orthopedic Appointment

Today Enzo had his six month orthopedic check up. I tried to reschedule for another time because I am not feeling well. However when the next available appointment was in April and not even with his doctor I decided to just go and deal with it. My mom stayed home from work and helped me with the kids today so she came to the appointment. The appt. was at 1:00, we left at 11:45 in order to get there first. What happens is there are about five to seven other people with a 1:00 appt. too. So first come first serve for the appt. We got there at 12:20 and of course Enzo fell asleep ten minutes before we got there. Luckily, my mom stayed with the kids and I checked him in. I got checked in and got a pager to let me know when they were ready for me. We got in there right at 1:00 and the resident doctor came in at five after, that is the fastest we have ever been seen! He checked Enzo's legs and arms for range of motion.

With Spastic Hemiparesis Cerebral Palsy when they go through a growth spurt their bones grow but their muscles tend to tighten up even more. It is really important for me to stretch his effected side daily for at least one minute. Let me tell you he does not like it at all and he resists about 90% of the time.

So the fact that I am stretching him it really helps with his range of motion. It definitely showed when the doctor measured him. They lay him down with socks and shoes off and flex his foot up toward his shin. The degree they can flex it up is positive and he score a 30 on both feet! That may not mean a lot to you but it does to me. Every month he has a Physical therapist appt. to check and make sure he is staying on track and they measure his range of motion then. The beginning of this month he measured 20 on his left (effected side) and 25 on his right. So I was extremely happy that he measured 30 on both, that is huge. Praise the Lord.

The doctor was great and said that Enzo looked super. He asked a few questions and said thank you and we will see you in another six months to check up again. The appt. was no longer than seven minutes if that. I am always happy to hear just that, see you in six months.

Enzo is doing great and it is always good to hear it from a professional.
